Ingredients:

  • 1 tbsp olive oil
  • 1 lb pork or chicken, cubed
  • 1 large onion, diced
  • 1 red bell pepper, chopped
  • 2 tbsp smoked paprika
  • 1 tsp cumin
  • 2 cups chicken broth
  • 1/2 cup sour cream
  • Salt and pepper to taste

Directions:

  1. Heat a large pot over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat.
  2. Add the chopped onion and cook for 5 minutes until softened.
  3. Stir in the diced potatoes, diced tomatoes, beef broth, and paprika. Mix well.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, stirring occasionally, until the potatoes are tender.
  5. Season with salt and pepper to taste. Serve warm.
