Mexican Goulash

Imagine the bold flavors of Mexico in a single dish: spiced ground meat, sweet corn, zesty tomatoes with chilies, and hearty rice. Each bite is a fiesta of textures and tastes, topped with fresh cilantro for an extra burst of brightness. It’s comfort food with a kick.

Ingredients:

  • 1 lb ground beef or turkey
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 cup corn kernels (fresh or frozen)
  • 1 can (14 oz) diced tomatoes with green chilies
  • 1/2 cup tomato sauce
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 cup cooked rice
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Directions:

  1. Heat a large skillet over medium heat. Add the ground meat and cook, breaking it apart, until browned. Drain excess fat.
  2. Add the chopped onion and minced garlic, cooking for about 5 minutes until softened.
  3. Stir in the corn, diced tomatoes with chilies, tomato sauce, chili powder, and cumin. Mix well and bring to a gentle boil.
  4. Reduce the heat to low and simmer for 20 minutes, stirring occasionally. Stir in the cooked rice and heat through.
  5. Season with salt and pepper to taste. Garnish with fresh cilantro before serving.
  6. Enjoy!
