Hungarian Goulash

Ingredients:

  • 1 tbsp olive oil
  • 1 lb pork or chicken, cubed
  • 1 large onion, diced
  • 1 red bell pepper, chopped
  • 2 tbsp smoked paprika
  • 1 tsp cumin
  • 2 cups chicken broth
  • 1/2 cup sour cream
  • Salt and pepper to taste

Directions:

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté for 5 minutes until soft and fragrant.
  2. Add the cubed pork or chicken to the pot. Cook for about 6 minutes, stirring occasionally, until the meat is browned on all sides.
  3. Stir in the smoked paprika and cumin, mixing well to coat the meat and onions evenly.
  4. Add the chopped red bell pepper and continue cooking for 2 minutes to soften slightly.
  5. Pour in the chicken broth, stirring to combine. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 50 minutes, stirring occasionally to prevent sticking.
  6. Remove the pot from the heat and stir in the sour cream. Adjust the seasoning with salt and pepper to taste.
  7. Serve warm with rice, potatoes, or crusty bread.
  8. Enjoy!
